Yes, these are a thing! I love finding new ways to incorporate these delicious Elixirs into different foods. And for someone who doesn’t like mushrooms, this is the best way for me to hide the flavour!!
These are an amazing way to get my immunity mushroom fix, as well as a little chocolate treat. They are packed full of antioxidants, immune boosting mushrooms, healthy fats, protein and magnesium. And they are super delicious.
What more could you ask for?!
1 cup peanut butter (I like chunky for this, to add some nut crunch to the cookies), or use almond butter
½ cup almond meal
¼ cup maple syrup
2 tsp vanilla powder
½ tsp sea salt
1 tsp baking powder
¼ cup cacao nibs
¼ cup dark chocolate, chopped (min 70% cacao)
1-2 tbsp Mushroom Elixir
2 tbsp cacao powde or Cacao Elixir
Preheat oven to 180 degrees.
Blend peanut butter, almond meal, maple syrup, egg, vanilla, salt, baking powder, mushroom elixir and cacao elixir/cacao powder in food processor. Add in cacao nibs and cacao powder and mix until just combined.
Roll into 1 tbsp balls and place on baking paper. Press down slightly. Put in fridge for 30 minutes.
Place in oven and cook for 12-15 minutes.
